Mushroom chicken gnocchi is an absolutely delicious dish I stumbled on and tweaked to make it even better. It has the deliciousness of mushrooms in a cream sauce with chicken protein and the gnocchi’s heartiness. It pairs amazingly with homemade peasant bread.
What Is Gnocchi?
Gnocchi is a type of pasta that is made from potatoes and flour. Small, soft, and shaped like little pillows, they are sort of a cross between a dumpling and a noodle. A meal of gnocchi is amazingly delicious and very filling.
I discovered this type of pasta when I saw it on the grocery store shelves. When I looked it up online to see what I could do with it, I found several recipes, combined a few, and tweaked them to create this recipe.

This particular dish, chicken and mushroom gnocchi, incorporates tender pieces of chicken breasts, delicious mushrooms, and soft gnocchi pasta, all coated with a creamy cheese sauce.
You can make the creamy cheese sauce by whisking together chicken broth, heavy cream, and Parmesan cheese in a separate pot. Combined with the chicken breast, mushrooms, and gnocchi, it will be coated in rich and savory cheese sauce.

- Chicken: Boneless, skinless chicken breasts or thighs are ideal for this recipe. You will need about one pound of chicken cut into small pieces.
- Mushrooms: You can use various mushrooms, such as cremini, button, white, or shiitake. You will need about eight ounces of mushrooms sliced. I usually use white, but I have used cremini in the past.
- Gnocchi: you can use store-bought or homemade gnocchi. You will need about one pound of gnocchi. You can buy this at your local grocery store. I have yet to make it myself, though I will probably try in the future. The package gnocchi works great!
- Olive oil and butter: To sauté the chicken and mushrooms, you will need about one tablespoon of olive oil and one tablespoon of butter. I use olive oil for the chicken, then drain it and saute the mushrooms, onions, and garlic with the butter. These could be olive oil or butter; this is how I have done it in the past.
- Garlic: Two teaspoons of minced garlic to add a flavorful touch to the dish.
- Salt and pepper: For seasoning, you will need about one teaspoon of salt and one-eighth teaspoon of black pepper.
- Chicken broth: You will need about half a cup of chicken broth to create the sauce.
- Heavy cream: You will need about one cup of heavy cream to give the sauce a creamy texture.
- Parmesan cheese: You will need about three tablespoons of grated cheese to add a pleasant, savory flavor.

- 1 pound chicken breasts chopped and browned in skillet
- 1 tablespoon olive oil
- 1 17.6-ounce package gnocchi
- 1 tablespoon butter
- ½ onion diced
- 2 teaspoons minced garlic
- 8 ounces white mushrooms sliced
- 1 cup chicken broth
- 1 teaspoon cornstarch
- 1 cup heavy cream
- ⅛ teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 3 tablespoons Parmesan cheese grated
Instructions
- In a large skillet, pour about 1 tablespoon of olive oil. Add in the diced chicken breast, and cook until done. Set aside.
- In a large pot, melt the butter over medium heat.
- Add chopped onion and minced garlic. Cook until onions are translucent and soft.
- Add in the sliced mushrooms. Cook until mushrooms are done (about 5-6 more minutes).
- Add 1/2 cup of chicken broth and simmer until almost all has evaporated.
- In a small bowl, mix the remaining 1/2 cup of chicken broth with 1 teaspoon of cornstarch. Mix until the cornstarch has dissolved. Add this to the mushroom mixture.
- Add the cooked diced chicken breasts, heavy cream, thyme, salt, and pepper.
- Let this mixture simmer while cooking the gnocchi in a separate pot.
- Follow the package directions on the gnocchi to cook. Drain and then add to your chicken, and mushroom mixture.
- Add the grated Parmesan cheese and let simmer for about 1 more minute.
- Remove from heat, serve, and enjoy! Serve with fresh rolls or garlic bread.
