This copycat of Rudy’s Green Chile Stew has pork stew meat, green chile salsa, green chiles, and potatoes. It is spicy and delicious. You can make it as hot as you like. Great for cold weather.
Rudy’s Green Chile Stew First Experience
This copycat of Rudy’s green chile stew recipe has some spice that can be lessened or increased depending on your liking. It has green chiles, green chile salsa, potatoes, pork stew meat, and seasonings.
I only last year discovered Rudy’s Barbeque. Their food is amazing. This copycat is not as good as theirs but a good substitute when I can’t get to one of their restaurants.
They use barbequed pork in their stew. I use boiled stew meat for my protein. You could try some variations to the meat within this recipe.
I love having the spice of the green chiles. It gives it a taste that will set your tastebuds dancing.
What You Will Need
Equipment:
- Large stew pot – I like to use my copper pot. Sometimes, if I have the time, I will put it in my CrockPot for the day. The slow cooker will have your house smelling wonderful.
- Saucepan – This is what I use to boil my potatoes. If I am in a hurry, sometimes I will microwave my potatoes in the microwave. This is up to you on what you prefer.
Ingredients:
- Pork Stew Meat – This can be bought at your local grocer. I buy the pork loins on sale, cut them up, and make my stew meat. I do this to try to save some money.
- Gemstone Potatoes – These colors add to this stew’s appearance. They are not necessary though any potato cut into bite-size pieces will work.
- Beef Broth – This just adds additional flavor. You could use the broth from boiling the meat in seasoned water, but the beef broth enriches the flavor.
- Diced Tomatoes – these add the acidity of tomatoes and some chunkiness to the stew. In the past, I have used stewed tomatoes that I cut up. Rotel is another alternative but it will definitely add some more heat.
- Green Chiles – A small can of chopped green chiles is perfect for this recipe. You can buy them in mild or hot, depending if you want more heat.
- Green Chile Salsa – There are so many green chile salsas out there. I use the Tejano Green Chile salsa from Kroger. I have used others in the past. You will need to use one you like the taste of. Your options are unlimited.
- Onion – Sweet onion is my choice for this recipe. You can choose whatever onion you prefer. I have, in a pinch, used onion powder, but I do prefer fresh onion chopped and mixed in.
- Garlic – You could use fresh cloves. I use the jar of minced garlic that I keep in my refrigerator.
- Seasonings – Cumin, chili powder, salt, and black pepper are the seasonings of choice for this recipe. Salt and pepper to taste. You can increase or decrease the chili powder depending on how spicy and hot you want your stew to be.
How To Prepare the Stew
Copycat Rudy's Green Chile Stew
Ingredients
- 1 ½ pounds pork stew meat
- 1 ½ pounds gemstone potatoes
- 2 cans beef broth
- 1 can petite diced tomatoes
- 1 can chopped green chiles
- 8 ounces green chile salsa
- 1 teaspoon cumin
- ½ onion chopped
- 2 teaspoons minced garlic
- 2 teaspoons chili powder
- cornstarch or potato flakes to thicken
Instructions
- Cut the gemstone potatoes into bite-size pieces. Boil until mostly done. Drain and set aside.
- In a large pot, boil the pork stew meat in the beef broth along with the onions, garlic, and dry seasoning. Boil until almost done.
- Add potatoes and remaining ingredients into the pot with the almost done pork stew meat.
- Simmer for about 30 minutes.
- Serve warm. Top with sour cream, cheese, or cilantro.
