- Salt: enhances the soup’s flavor and balances out the other ingredients. Depending on how many more potatoes I may add, I must add more than one teaspoon.
- Black pepper: A spice that adds a subtle heat and depth of flavor to the soup. I definitely add more of this because my family loves a lot of pepper.
- Chicken broth: A flavorful broth that I buy pre-made that adds a rich and savory flavor to the soup. You can make your own, and I have in the past, but most of the time, I use the pre-made store-bought kind.
- Heavy cream: A rich and creamy dairy product that adds a smooth and velvety texture to the soup. If I do not have this on hand, I will substitute half and half or whole milk.
- Sour cream: a tangy dairy product that adds a creamy and slightly tart flavor to the soup.
- Fiesta cheese, shredded: A blend of cheeses that adds a melty, cheesy flavor to the soup. I buy this from Walmart. H-E-B sells Mexican cheese that is the same. Depending upon your store will depend upon the name. It is just three or so cheeses combined.
- Potato flakes or cornstarch to thicken: A thickening agent that helps give the soup a creamy consistency. I prefer to use potato flakes since this is a potato soup. Potato flakes are what some use to make instant potatoes. It works great as a thickening agent.

Cheesy Ham and Potato Soup
Ingredients
- 8 cups russet potatoes diced
- ½ sweet onion diced
- 3 carrots diced
- 1 pound ham cubed
- 1 teaspoon salt
- ½ teaspoon black pepper
- 4 cups chicken broth
- 1 ½ cups heavy cream
- ½ cup sour cream
- 1 cup fiesta cheese shredded
- potato flakes or cornstarch to thicken
Instructions
- Combine diced potatoes, chopped onion, carrots, ham, salt, black pepper, and chicken broth in your slow cooker. Let it cook on high for 4-5 hours.
- For an improved texture, use a potato masher to roughly mash around one-third of the potatoes and place them back into the slow cooker.
- Add the potato flakes or cornstarch (to thicken further), heavy cream, sour cream, and fiesta cheese. Stir to mix well. Let cook on high for another 15-30 minutes until all is melted and hot.
