Delicious and easy slow cooker carne guisada is the best I have ever tried. It combines beef stew meat, diced tomatoes, bell peppers, onions, and seasoning. Scrumptious until the last bite.
Best Carne Guisada
My husband loves to order carne guisada at restaurants. He always orders it—and yet I never even tried it because I was a fajita girl all the way.
One day I began looking at different recipes for carne guisada. I liked some, but none caught my eye. I began to make my own. I took what I felt were the best elements from each recipe I found.
I love anything that I can put in a slow cooker and leave. This was one recipe that I adapted to be able to do just that. Many recipes I had previously found did not allow for a dump-and-go in my CrockPot.
I hope you enjoy this as much as my husband and I do. It is one of our favorites. It is also so easy to make.
Thickening the Juice
Near the end of the cooking, you must decide if you want the juice thick or thin. We like ours a little thicker than it turns out naturally.
Some people like to thicken with flour; I prefer cornstarch. Dip 1/4 to 1/2 of a cup into a measuring cup, then measure 1-2 tablespoons of cornstarch. Mix this well so as not to have lumps. I use a little hand mixer that I have for my protein shakes. A whisk will work, but the small battery-powered mixer does amazing.
Serving Suggestions
My husband and I usually make brown rice and warm up some flour tortillas. You can serve the carne guisada over rice or mashed potatoes if you do not want the tortillas.
We love freshly made flour tortillas with it. My husband puts the carne guisada in the tortilla, taco-style. I prefer to eat it separately, dipping my tortilla in the delicious sauce from the dish.

Slow Cooker Carne Guisada
Equipment
- 1 slow cooker
Ingredients
- 1 ½ beef stew meat
- ½ onion diced
- 1 small bell pepper diced
- 3 tablespoons tomato sauce
- 1 can Rotel diced tomatoes with green chiles
- 3 teaspoons garlic minced
- 2 teaspoons ground cumin
- 2 teaspoons salt
- ½ teaspoon black pepper
- 1 cup chicken or beef broth
- 1 tablespoon cornstarch
- flour tortillas for serving
Instructions
- In a slow cooker, add beef stew and chicken or beef broth.
- Dice the 1/2 onion and small bell pepper. Add to slow cooker.
- Add all of the dry ingredients except for the cornstarch to the slow cooker.
- Add the tomato sauce and diced tomatoes.
- Cook on low for 7-8 hours or high for 4-5 hours.
- About 20 minutes before you serve up the dish, spoon out about 1/3 cup of the juice. In a small bowl, mix it with the cornstarch. Whisk together until it is smooth without lumps. Pour this mixture back into the slow cooker, stirring vigorously. This will thicken it up.
- Serve with flour tortillas. This also goes well with rice or potatoes.
